Was a breeze..
Made sure that I had a VM image of Windows server 2008 standard with IIS 7 (web role) enabled
topped it up with SP2 of windows server 2008
post that almost everything is taken care by the installer..
Before installing Sharepoint 2010, click on the link in the installer which says "install software prerequisites" - all downloads and installations (including native SQL Server 2008) will be taken care by the installer
one KB update missed out will be KB971381 which can be downloaded here and installed http://connect.microsoft.com/VisualStudio/Downloads/DownloadDetails.aspx?DownloadID=21953
Rerun the installer after this update - everything else will be similar to 2007 installation.
